The Rebirth of Carbs

By Marjorie Geiser As a registered dietitian, and someone who specializes in sports nutrition, I was appalled when the low carbohydrate fad came into popularity. However, I also predicted that in a couple of years people would become better educated and ready to really pay attention to how to eat for health. Yes, people lost weight, but mostly because they eliminated many of the high fat, high calorie snack foods and meals they were previously eating. Unfortunately, the foods that promote health were also eliminated as all carbohydrates came under attack. Gone were the chips but also gone were the fruits and vegetables so high in health-promoting nutrients. Even worst of all was the increase in animal fats that are known to promote disease and inflammation. Lets first address why the low carb diets bothered me. Carbohydrates are one of the three major nutrients in our diet, known as macronutrients. Protein and fat are the other two. These three nutrients supply most of our calories, with alcohol being the fourth. All foods break down into glucose, which is our primary fuel and the only fuel for the brain. No matter what, the brain needs glucose to survive. Even some of fat breaks down into glucose. During the low carb diets, people were instructed to avoid all obvious carbohydrate foods, and in some diets were even encouraged to check their levels of ketones in their urine. Ketones are a byproduct of impartial fat metabolism for people who are not getting enough carbohydrate in their diets or, for medical reasons, are not utilizing the carbohydrates they are eating. However, carbohydrates are the primary fuel for breaking down body fat during exercise. So, here we have people who want to lose weight trying to also exercise, but because they are not eating the primary fuel for that exercise, their exercise intensity suffers. As a consequence, they burn fewer calories during exercise and cannot burn as much body fat. Not only does science support this, but I would see this happen with my own clients. I also used myself to experiment on. One of my clients challenged me to try the Atkins diet. Never mind the effect of cutting out all my fiber in my diet (constipation), but by the third day I felt like I had lead feet when I tried to do my usual workout! I had no fuel in my body at all. By day #5, I felt I was doing my system more harm than good and went back to my fruits, vegetables and whole grains. Ahhh. Also, I had not consciously realized just how high my diet was in whole grains, fruits and vegetables, and how low it was in animal products, particularly animal fats. This brings up the other problem I had with these diets. More research than I can mention has shown the advantages of a diet high in fruits, vegetables and whole grains. Because of the phytochemicals in these foods, it has been shown that people who eat high amounts of these foods not only weigh less but their health benefits from the high intake of antioxidants and vitamins. Studies looking at cancer and heart disease continually conclude that high intakes of these foods benefit health. My own experience with clients has also shown this. Most people already eat too few servings of fruits and vegetables. Once they increase them, however, they find themselves filling up on fewer total calories. Not only do they start to feel better but they start to lose weight! Starches still have a bad rap, but once people realize the difference between one starch and another, we may actually see more people eating diets consisting of whole, unrefined foods. So, I guess the benefit of the high protein, low carb diets may be the new awareness that people have in the value of eating unprocessed, whole foods, and that all foods really DO fit into our diet. Eat What You Want

By Beverley Clement Eat what you want. I want you to imagine a day free from dieting. Today is the day you can eat all you like, and whenever you want to eat. You have no computer to check calories, no books to help you, how would you do? What I am asking is have you learnt anything about your eating habits since starting your diet. I want you to devise yourself a menu of foods you want to eat. Please note: it is what you want to eat not what you think you should eat. If you want fast food for each meal then fine, jot it down in your journal, remember be true to yourself. This diet works when you make the choices because you want to make them not because someone is telling you to do it. The day will come when you have no computer to hand and maybe no healthy food around either. People will go and visit friends, or go on holiday, how will you cope? The time to make those sorts of plans is before they happen. When they happen they dont take you be surprise because you know enough to make good choices to keep fit and healthy even if the only food around you is fast food for one day. An odd day of eating a few too many calories will not hurt, it becomes when a problem when it becomes a habit. What food do you have a problem with? It can only be one item of food because as we have seen we take it one step at a time. Once you have dealt with one piece of food, then you can return and tackle the next piece of food. Make your write down what this food is and then tell someone (even if it is in your journal) every time you eat it. This exercise isnt to stop you eating it, but firstly to realise how often you eat it, and then to control how much you eat of it. If you are eating burgers three times a day, then you will know that is not good for you. If you look at your journal and see it then you will think, hey today I only ate one. That is a big achievement, and the week that you only ate 2 can you imagine how you will feel. See the self esteem rising, as you controlled this one food. The great thing is once you see yourself doing it for one food, then you can do it for all food. There will be nothing to stop you moving on to eating healthily and to eat foods you really enjoy and love without any feeling of regret. What is the most important thing I should know before I start the hobby of model ship model building? The model building experience is meant to be fun not frustrating. By selecting the right model for your skill level you will achieve a piece of art that you will be very proud of. The most important thing to remember though is to have fun. What is a good starter kit? There are two somewhat challenging tasks when assembling a model. Construction of the hull and rigging. Bending and tapering wood for these types of models can be done without any special tools. The second layer of wood for planking the hull of a European kit will generally be a good quality veneer. This gives you the option to paint the model or leave the wood natural. Why are some kits more expensive than others? Other than the size of the model, the quality and range of fittings and wood will be better in a kit that is more expansive. You can buy a less expensive kit and change out the fittings and wood to a higher quality if you wish. What kind of tools do I need? We always recommend keeping the tool selection simple. First, look around your home to see what you already have or can adapt. A good hobby knife, small saw and miter box, glue and sandpaper will get you going. You can make many home made jigs that will help you in the construction of the model. What are instructions like that come with the kits? North American kits come with reasonably good instructions. There can be issues with some of the European terminology. Entry level kit instructions are also fairly explicit. With intermediate level and ambitious kits, the instructions usually apply to the particular model itself as opposed to general modeling techniques. There are very good books on general model building that you can use to augment the instructions that come with the kit What if I break a piece or run out of material that comes with the kit? We are able to obtain all material that comes with a kit. Extra wood, rigging and fittings are available so there should be no worries about running out of material. How do I start the construction? Most kits are plank on frame. It is really important to build a good frame. The frame consists of a false keel, bulkheads and false decks. Although all of the pre-shaped pieces of wood are laser cut, they will require some sanding. With the frame built correctly, you won’t have much trouble with the application of the planking materials. Above all, have fun, enjoy the ship model building experience. It reminds me of a joke told of a quick-thinking old man from a far country, who visited New York City with his son. As they walked and marveled at the huge buildings, they wandered into a hotel lobby. As they feasted their eyes on the marvels of modernity, the old man watched, pleasantly remembering his wife, as an elderly woman walked towards a wall and touched it with her fingers. Background Checking: They Aren’t Just Checking References Any More

By Jeff Altman For the longest time, employers would do simple background checks. They have a potential employee complete a job application where they were asked for three professional references. Before the employee was hired, the three would receive a telephone call and tell the potential employer that the job applicant was a wonderful individual who would do incredible things for them, just as they had done before. For a while, polygraphs or lie detectors became part of the standard arsenal of checking until, fortunately, legislation was passed in many states eliminating it as a tool (they were notoriously inaccurate). In a recent poll, 77% of employers surveyed were searching the web for information about new hires and 35% had eliminated a candidate based upon something they found there. A few years ago, a manager I was working with at a hedge fund Googled the name of a job applicant for a technical position and found a posting where they had written that they were still working in technology only because they had suffered large trading losses and wanted to join a company where they could learn what they did wrongin other words, learn how my client traded and steal the model. Suffice it to say, the candidate was rejected. Companies are examining listings on www.myspace.com and www.facebook.com to determine whether the job applicant might have done something inappropriate. And, as they have for years, many are doing background checks including checks of your financial responsibility (credit checks).
